These are my Grandpa Pearl's cookies. He was a great cook & baker, although my grandmother did give him a run for his money.
They are simple, probably a depression era cookie, and by no means does the original recipe have Chinese 5 rice powder in it, but I took some liberties, These soft Cookies get their iconic flavor and texture from applesauce and bran cereal and simply take me back to childhood where a huge plastic container of these goodies lay in wait for us grandkids when we would visit. So comforting & delicious!
Grandpa Pearl's 5 Spice Applesauce Cookies
Makes 12 cookies 1/4 cup very soft butter 1/2 cup coconut sugar (or regular sugar) 1 egg 1/2 cup applesauce ( I use unsweetened) 1/2 teaspoon baking soda 1/4 teaspoon sea salt 1 teaspoon Chinese 5 spice powder (you can simply use cinnamon if you prefer) 3/4 cup all purpose flour 1/2 cup raisin bran cereal, crushed 1/4 cup raisins (optional) Preheat oven to 375. Cream together butter and sugar until fluffy in amixing bowl by hand or in a stand mixer. (I've had my KitchenAid stand mixer for over 10 years) Add the egg and mix well. Combine baking soda with the applesauce. Mix together and add to the butter and egg mixture. Stir in a pinch of salt, Chinese 5 spice powder, flour and crushed raisin bran cereal. Add in the extra raisins if you’re using and mix well. Spoon heaping tablespoons full onto a parchment paper lined baking sheet and bake at 375 for 10 minutes. I place just 6 cookies on a sheet to give them lots of room to spread. Once out of the oven and cooled you can opt to drizzle them with a powdered sugar glaze, cream cheese icing or just a dusting of powdered sugar. I like them just as they are.
