Buckwheat pancakes are a nod to my childhood. They're earthy, nutty and buckwheat happens to be gluten free to all my gluten free friends can enjoy without guilt,.
They come together quickly and leftover can store in a resealable bag in your fridge for a week or so, making for a quickly reheated breakfast. While buckwheat was grown on my childhood farm as a winter cover crop, it's not actually a wheat (hence it being gluten free). I'd classify it more as a grass and the seeds are what that nutty flouor is made out of.
I loved to dig into these at my Grandma Rice's house as a child and enjoy them still to this day,
I amped up the game a bit with this lovely, warm cherry almond compote, but you can certainly go the butter and maple syrup route. Dig in!
Grandma Rice’s Buckwheat Pancakes (Gluten-free)
These Ingredients can also be found atThriveMarket HERE. 1 cup buckwheat flour 1 Tablespoon cane sugar, brown sugar or coconut sugar (optional) 1 teaspoon baking powder ½ teaspoon baking soda Pinch sea salt 1 large egg 1 cup almond milk, buttermilk or milk of choice 1 teaspoon vanilla paste or extract 1 Tablespoon neutral oil like avocado oil In a large bowl, whisk all ingredients together until well combined. Dollop into desired sizes onto a preheated nonstick griddle or skillet with a bit of butter. Cook about 2 minutes on one side on medium to medium low heat until bubbles start to form around edges. Flip and cook on the other side about 1 minute. Serve hot with warm cherry almond compote, butter and optional maple syrup. Cherry Almond Compote 1 cup frozen dark sweet cherries. You can thaw them, but it's not necessary. 1/2 teaspoon almond extract drizzle maple syrup pinch salt Put cherries in a small saucepan and cook on low heat until the cherries are melted and juicy and their liquid is just beginning to reduce. Add almond extract, maple syrup if you want your compote sweeter and salt. Serve warm over pancakes.
