RATTLENAKE BITES (A/K/A JALAPENO POPPERS)
This is a simple and tasty app for your game day party or for noshing on any time you want a bit of heat and cheesy, buttery mouthful. I call them the bite that bites back. Jalapeños are a mix of heat levels and it seems the larger the jalapeño, the more mild the heat level. This recipe makes between 10-15 smallish sized jalapeños and the crispy Panko coating on top makes them sensational. The cheese mellows the heat of the pepper and buttery Panko topping makes the perfect bite. Feel free to add bacon if your soul desires. Go Team! Approximately 15 Jalapenos cut in half (remove core and seeds) 4 oz log goat cheese at room temperature 2 T mascarpone at room temperature (optional but makes them creamier) 1 c shredded smoked gouda cheese Salt to taste 2/3 c panko 2 T butter Melt butter (microwave is the quick way) and stir in panko until thoroughly coated. Mix cheeses and stuff into jalapeno halves, pressing mixture in firmly. Bake in 400 degree oven 10-12 minutes then pull out and top w/panko. Put back in for another 15 minutes until panko is toasty and golden and jalapenos are soft.
