Easy Gluten Free Chocolate Soufflé

Makes 8

2 tablespoon unsalted butter, at room temperature, for greasing the ramekins.

2 tablespoons cane sugar to coat ramekins


Souffles
12 ounces of dark or semi-sweet chocolate or for a milder chocolate experience, use 4 (3 ounce) disks Mexican chocolate, coarsely chopped. You can find this in the latino section of larger groceries.

6 tablespoons unsalted butter, at room temperature

6 large egg yolks, beaten

6 large egg whites

1 tablespoon allulose, a natural zero calorie sweetener (or regular cane sugar)

1/2 teaspoon cream of tartar

1/4 teaspoon sea salt


Preheat the oven to 400 degrees.

Butter 8 (1/2 cup) ramekins or custard cups with the 2 tablespoons butte, then sprinkle them with sugar, swirling around to get an even coating. Set aside.


  • Gently melt the chocolate and 6 tablespoons butter in a large microwave proof glass bowl.  Microwave for 60 seconds first, then in 30 second increments until the chocolate is thoroughly melted.  Mix together and let cool slightly.
 
  • Vigorously whisk in the egg yolks, mixing to incorporate.
 
  • Using an electric hand held or stand mixer, beat the egg whites in a medium bowl until foamy. Add the allulose and cream of tartar and beat until stiff peaks form.
  • Fold gently into the chocolate mixture in 3 additions, being careful not to deflate the whites.
 
  • Divide the chocolate batter among the prepared ramekins, filling them three-quarters of the way.   You can take your tumb around the edges for a more professional finish, but not needed (see YouTube video).
 
  • Bake the souffles until puffed but the centers jiggle slightly, 16 to 18 minutes. Serve immediately before the soufflés begin to deflate.  You can dust with powdered sugar.  I love to serve with whipped cream, a raspberry coulis (sauce) or a bit of vanilla ice cream and fresh berries.
 
  • To prepare in advance - you can cover and chill the soufflés for 2-3 hours before baking.  Just add a couple additional minutes onto the bake time.
