Makes 8 2 tablespoon unsalted butter, at room temperature, for greasing the ramekins. 2 tablespoons cane sugar to coat ramekins Souffles 12 ounces of dark or semi-sweet chocolate or for a milder chocolate experience, use 4 (3 ounce) disks Mexican chocolate, coarsely chopped. You can find this in the latino section of larger groceries. 6 tablespoons unsalted butter, at room temperature 6 large egg yolks, beaten 6 large egg whites 1 tablespoon allulose, a natural zero calorie sweetener (or regular cane sugar) 1/2 teaspoon cream of tartar 1/4 teaspoon sea salt Preheat the oven to 400 degrees. Butter 8 (1/2 cup) ramekins or custard cups with the 2 tablespoons butte, then sprinkle them with sugar, swirling around to get an even coating. Set aside.
