What's for breakfast? How about protein loaded, deliciously flavorful egg bites that are better, healthier & far less expensive than the coffee shop versions. They also pack and reheat well if you're not able to have breakfast in the comfort of your own cozy kitchen.
Also with these winning egg bites, you can add whatever you like. While I stuck with briny kalamata olives and sweet cherry tomatoes right out of our garden, you can add cooked bacon or sausage, smoked salmon or greens such as chopped spinach.
Roasted bell peppers or sun dried tomatoes are another favorite add in.
If you like cheese, you can load yours up. I added a bit of slightly tangy goat's milk cheddar, but soft, creamy goat cheese would be equally awesome (try that with smoked salmon). Cheddar, asiago or parmesan are also great cheeses to use.

I make these frequently so that I can have a high protein "to go" breakfast when I need to spend the day in the office and there's no time to fit in breakfast at home. I can switch it up every single week according to what's in my fridge and pantry.

You'll need:
Silicone egg bite molds Ninja Foodi or Instant Pot Egg Beater (optional) Egg Bites (dairy free options available) Makes 7 4 eggs. (I love the golden yolk of pasture raised eggs) 1/4 cup coconut milk (or cream/milk)amzn.to/4d4A8vZ 1/4 cup regular or plant based sour cream 1 tablespoon pesto 1/2 teaspoon sea salt 1/4 teaspoonfreshly ground pepper 1/4 cup goats milk or regular cheddar ( I find I tolerate goat's milk cheeses, but you can leave out of desired or use a plant based cheese) 1 tablespoon chopped kalamata olives 7 cherry tomatoes, halved Spray egg bite molds with a bit of cooking spray (olive oil or avocado) Beat first 5 ingredients together in a pitcher (ormeasuring carafe) to make pouring into the egg bite molds easier. I love an old school rotary beater which makes the eggs very fluffy. To each mold evenly add a bit of cheese, olive and the cherry tomatoes. Pour the egg mixture evenly into the molds, leaving a slight space at the top. Cover with aluminum foil and place on the trivet for your Ninja Foodi or Instant Pot. Place appropriate lid on the Ninja Foodi and set to steam for 10 minutes. After the initial steam, let naturally release pressure for another 10 minutes then carefully release any remaining pressure and open the lid. Lift out the trivet with the egg bites mold and carefully remove foil. Let cool slightly then gently press the egg bites out of the mold. Enjoy. You can let them cool completely and keep in the fridge or freezer until you're ready to microwave them. To microwave, wrap 2 egg bites in paper towel and cook 45-60 seconds. From frozen this takes about 1 1/2 minutes in the microwave for 2, depending on the strength of your microwave. You can also wrap in foil & reheat in a 350 oven for about 15 minutes.
