More of a craft idea than. recipe, these cute Easter egg Cakes come together so easily and fun for the whole family. The lemon curd "egg yolk" is a bright, zingy compliment to the beautiful vanilla cake.
No egg shaped pan? No worries! Simply bake your favorite vanilla cake (homemade or box mix) in a sheet pan and cut out egg shapes with an inexpensive egg shaped cookie cutter.
Sprinkle with powdered sugar and dollop with lemon curd. That's it!
I think sprinkles are definitely called for here. They're just super cute and add a bit more color. Pay no attention to the empty spot where one of these cakes used to be. Blame it on some bunny.
Easy Easter Egg Cakes
1 recipe vanilla cake (or use a box mix such as Bob's Red Mill Vanilla Cake) 1 10-12 ounce jar lemon curd powdered sugar sprinkles (optional) In a egg shaped cake pan or in a sheet pan, bake the cake according to recipe or package directions. Once cool, turn out and cut out egg shapes with cookie cutters if you're not using an egg shaped pan. Dust very liberally with powdered sugar using a sieve to resemble the white of the egg. Dollop a small amount of lemon curd where the yolk would be in an egg. You can also use a pastry bag to make this a bit easier, but as you can see in the video, I use 2 small spoons to assist. Add sprinkles if you desire. Let everyone smile & enjoy the cuteness factor of this delicious vanilla cake with a bite of zingy lemon curd.
