Imagine a creamy, chocolately fudge like bite that has no dairy, no processed sugar and is one of the best chocolate bites you've ever had. This vegan "fudge" is that bite.
I'm all about anything chocolate, and when my brother's girlfriend, Jenna, told me she had been working on a healthy vegan fudge, I was intrigued. ![]()
Upon a visit to Indiana, I sampled said fudge more times than I care to admit, and asked what was in the mystical concoction. Jenna texted me a list of ingredients she had used and after a few trial and error batches (all of which were readily consumed), I settled on what I believe to be the perfect amounts of dates, chocolate, coconut oil and almond butter that combine with a few other tidbits to make a fabulously flavorful fudge that is not detrimental to one's blood sugar or waistline and will put a smile on your face.

Coconut Oil - Coconut oil helps make this fudge creamy, but also adds some healthy fat in the form of MCT (medium chain triglyceries).
Almond Butter - Natural almond butter adds more healthy fat and some protein as well as more creaminess and an amazing flavor.
Raw Cacao - in addition to melted chocolate, I add raw cacao powder which is an antioxidant loaded, unprocessed form of cocoa powder that can fight inflammation and reduce blood pressure.
So you can see that these glorious fudgy bites are more than just a sweet treat, although you're going to thoroughly enjoy them and may totally forget the "good for you" benefits as you luxuriate in each mouthful.
Make a batch to keep or share, or a bit of both.
Vegan Chocolate "Fudge"
(Makes 1 loaf pan) 6 Dates, pitted and torn in half 1/2 cup dark chocolate chips 1/4 cup coconut oil 1/4 cup all natural almond butter 1/4 cup raw cacao powder or cocoa powder 1 teaspoon vanilla paste 1/4 teaspoon sea salt 1/8 teaspoon almond extract (optional) 1-2 tablespoons chopped walnuts, pecans or pistachios (optional) Line a loaf pan with parchment paper. In a small bowl melt chocolate chips in the microwave in 30 second increments until you can mix to a smooth consistency. Add all ingredients except nuts to the bowl of a small food processor and blitz until creamy, scraping down the sides of the bowl occasionally. This can take a couple minutes or more. Pour mixture into parchment lined loaf pan and spread out evenly. Sprinkle on nuts if using. Place in the freezer until firm, about 20 minutes. Pull out of loaf pan (using parchment paper makes this so easy) and slice into desired sized pieces. I store mine in a container or reusable bag in my freezer so they're always ready for a healthy, sweet bite.
