These are great while they're hot, but I've been known to eat them cold out of the fridge as well. This makes them a great transportable snack or good for a unique picnic offering.
Air Fyer Scotch Eggs
Makes 4
1. Wrap the Eggs - Flatten a portion of the sausage mixture in your palm or on parchment paper and carefully wrap it around each egg, ensuring an even coating without gaps. I roll the eggs through the flour first to ensure the sausage can stick a bit better. 2. Coat in Breadcrumbs - Prepare three bowls: one with flour, one with a beaten egg to which you've added optional hot sauce and one with breadcrumbs. Add the salt & pepper evenly to the flour and breadcrums, Roll each sausage-wrapped egg in flour, then dip it into the beaten egg, and finally coat it with breadcrumbs for a crispy exterior. 3. Cook to Perfection - Place in the basket of the air fryer and spray with a bit of oil. In my Ninja Foodi, I cook these for 12 minutes, but all air fryer will vary. You need to ensure the sausage is cooked through. For baking: Place the coated eggs on a baking sheet and bake at 400°F (200°C) for 25-30 minutes, turning halfway through. Serving Suggestions Scotch eggs can be enjoyed hot or cold, making them a fantastic addition to picnics, lunchboxes, or even breakfast spreads. Serve them with mustard, pickles, or a fresh side salad for a balanced meal.
