So easy I can’t really justify calling it a recipe, but it’s a miraculous blend of equal parts instant coffee granules, sugar and hot water all whipped into a light and fluffy topping for your milk of choice, hot or cold.
DALGONA WHIPPED COFFEE
makes 1 drink 1 Tablespoon instant coffee granules or instant espresso 1 Tablespoon coconut sugar, or your sugar of preference 1 Tablespoon very hot water dash cinnamon (optional) milk of choice, hot or cold. I love coconut milk for this. Mix everything together in a small bowl, letting the hot water melt the sugar and coffee granules together Whip with a hand held beater or by hand if you’re willing to spend a bit more time and energy. Within a minute or two your mixture will change to a beautiful caramel color and resemble mocha whipped cream. Spoon on top of iced or hot milk of choice. I pour coconut milk over a glass of ice then top with the whipped mixture and sprinkle with cinnamon. Delightful as an afternoon pick me up.
