Tips & Variations

Make it vegetarian: Swap chicken for black beans or sautéed veggies (black beans & sweet potatoes being among my favorite vegan option)

Freezer-friendly: Assemble, freeze unbaked, then bake straight from frozen—just add a few extra minutes to the oven time.

Crispy Cheesy Chicken Sheet Pan Tacos

Serves 4-6 (scale this up or down to feed 1 or a crowd)

Ingredients
  • 2-4 cups cooked, shredded chicken (use homemade or rotisserie chicken for a shortcut) (use larger portion for larger tortillas)
  • Small jar salsa of choice
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 12 flour or corn tortillas (the size is up to you)
  • Cooking spray or avocado oil (Chosen brand avocado spray oil recommended)

​Optional toppings & garnishes for serving: shredded lettuce, cilantro, diced tomatoes, salsa, guacamole, sour cream, pickled red onions, jalapeños, hot sauce.


Instructions
  1. Preheat oven to 425°F. Lightly grease a large sheet pan with cooking spray or oil or use parchment paper.  Alternatively these can be done in an air fryer.
-Prepare the chicken:If using raw chicken: Cook and shred before proceeding. I had cooked mine in the slow cooker earlier in the day, which is a great tip if you happen to be gone most of the day and will be prepping this right before dinner.

-If using rotisserie chicken: Shred meat and discard skin and bones.

-Mix chicken with salsa

-Assemble tacos
:
  1. Place tortillas on the sheet pan & ensure they're oiled on both sides with the spray oil or a drizzle of avocado oil.
  2. Sprinkle with cheese, add a spoonful of chicken to one half of each tortilla, then sprinkle with more cheese.
  3. Bake for 10-12 minutes in the oven or about 8-9 minutes in an air fryer at 390 F
  4. Remove from oven and immediately fold over into the taco shape, using a spatula to assist.
  5. Serve with your favorite garnishes and toppings..
