Tim and I were perusing Sprouts after church on a Sunday when he stumbled upon some very nice looking center cut pork chops in the butcher case. Needless to say they came home with me and I set about figuring how I’d prepare them. I had been wanting to do a coffee rub, but figured it would be for steak or chicken. I am so glad I chose to try it on the chops as this was a sensation. The video testimonial professes their success. Pork should be cooked to 145 degrees so I use an instant read thermometer to ensure perfect doneness. I cooked mine to about 155 and so amazingly delicious. ![]()
I prepared a late lunch for Tim and I and grandson Alex. He declared them a 10 out of 10. Quite a high compliment.
I used espresso ground coffee, but honestly if you had to open up a K-cup for the tablespoon of coffee, that would work too. The 5 ingredient rub is so easy. Just coffee, coconut sugar or brown sugar, smoked paprika, garlic powder & salt.
The chops get nicely charred on the grill and it doesn’t matter if you grill outdoors or indoors in a heavy skillet. These couldn’t; be easier, or tastier.
Coffee Rubbed Pork Chops
Serves at least 4 4 center cut pork chops, about 3/4 inch thick 1 tablespoon ground coffee (espresso grind is best) 1 tablespoon coconut sugar or brown sugar 1 teaspoon garlic powder 1 teaspoon smoked paprika 1 teaspoon course sea salt Mix all spices together in a flat dish like a pie plate and dredge chops to coat all sides. Place on a hot grill until seared on one side, then flip and sear on the other side. Temperature should read 145, or when no longer pink in the center. I like to take mine to about 155 degrees Alternatively you can cook indoors in a hot skillet (I love an iron skillet for this) with a touch of oil following the same process. The exterior should have a nicely charred, crisp crust. Let rest at least 5 minutes before slicing.
