1 jar (15 oz) chickpeas (garbanzo beans), drained and rinsed Zest & juice of 1 lemon juice (1 large lemon - about 1/4 cup juice) 1/4 cup well-stirred tahini 1/4 cup olive oil plus extra for drizzling 1 small garlic clove, minced 1 teaspoons sea salt (or to taste) 1/2 teaspoon smoked paprika 2 to 3 tablespoons water Optional garnish: chili flake, extra olive oil Add everything, but olive oil and water to a food processor and blitz, until the chickpeas become slightly creamy. Drizzle in the olive oil and water and continue to blitz until very smooth. Taste for salt & pour into your serving bowl. Drizzle with olive oil. Dust with chili flake if desired.
