Almost too easy to be considered a recipe, but the thought of using any oil based condiment to fry an egg is totally trending right now and almost the best idea since sliced bread. Almost. These colorful, holiday eggs use two of my absolute favorite condiments (I call them Kapow condiments because they pack a punch if flavor), I have them on hand always either in my pantry or fridge. The first being chili crisp oil which is an Asian condiment that you’ll now find everywhere consisting of dehydrated, onion, garlic & chili on flavorful oil. The texture of the dried bits in the oil is what makes this so enticing. I love to put it on chicken, rice, eggs, tofu….just about everything benefits from a but of spice and crunch, Perfection. The second is good ol’ pesto. I love to keep a good quality jarred pesto on hand for when my own basil is not in season (or I’m too busy to make my one pesto). I love to mix in a bit with the remnants left after sautéing chicken, add some whine and voila, instant delicious pan sauce. Mix it with some mayo for a gorgeously flavorful pesto mayo. Options unlimited.
Christmas Eggs (red & green) Eggs (quantity up to. You). I love organic pasture raised eggs due their vibrant yolks! 1 heaping teaspoon chili garlic crisp per egg (look for this in the International/Asian foods section) 1 heaping teaspoon jarred or homemade pesto per egg Salt to taste Chopped parsley for garnish if desired. Heat a skillet (I love my Smithey Heirloom Quality Iron Skillets) to medium heat then add the red or green condiment of your choice. One it’s sizzling, add the egg and cook to your preferred doneness, flipping if you want an over easy yolk. Wipe pan between using red or green condiments to keep the colors clean. Sprinkle with parsley and serve with some hearty toast for dunking in the runny yolks.
