I love being able to have a decadent chocolate cake in an instant. Chocolate cake seems to be one of my sweet cravings and knowing I don't have to bake an entire cake is a plus. These are especially deep, rich and chocolatey and look so cute in their individual portions. A topping of good vanilla bean coconut milk ice cream and a few raspberries is my favorite with these.
Chocolate Ramekin Microwave Cakes 2 thin cookies (like Chips Ahoy thins) (optional) 3 T flour 1T cocoa (heaping) 1/4 t baking powder 2 T coconut sugar (or regular sugar) Pinch salt 3 T coconut milk 2 T neutral flavored oil (such as grapeseed) 1 t vanilla (I like vanilla paste) 2 t chocolate chips Raspberries and or whipped cream (optional for topping) Mix dry ingredients in small bowl. Add milk, oil and vanilla and stir well. Pour into 2 buttered 4 oz. ramekins into which you've placed a cookie. Place 1 t chocolate chips on the center of each filled ramekin. Microwave both ramekins together approximately 1 minute (depending on your microwave). Top as desired and serve warm. Chocolate decadence!
