Chewy, ooey, gooey maple oat bars covered in chocolate that are a cinch to make? Yes please! These bars come together so quickly. It's basically mix, bake, chill and enjoy. It's literally that simple.

The sugars are gorgeous coconut sugar that has such a wonderfully deep flavor, and is further enhanced with the addition of amber maple syrup. No imitation stuff please in these bars. Opt for the real deal maple syrup.

All you have to do is mix ingredients together in a bowl, pack it firmly into the baking pan and then once these bars are out of the oven you pour over the chocolate chips, let them melt until they are gloriously spreadable and then chill the bars before cutting and digging in.

I keep the bars chilled. I love to pull the bar out of the fridge and know that the chewy oat crust, topped with that beautiful ganache type chocolate is a perfect bite.
Such an easy recipe as this is great for first time bakers or baking with the kiddos. It's not fail and promises success and accolades all around.
Chocolate Maple Oat Bars
Makes 16 bars 2 cups quick cooking oats (not instant) 1/2 cup butter, melted (I melt mine in the microwave on 30 second increments) 1/4 cup coconut sugar (or brown sugar) 1/4 cup real maple syrup 1 teaspoon vanilla (I love vanilla paste) 1/2 teaspoon sea salt 8 ounces chocolate chips. (I used Enjoy Life chocolate Chips) Spray oil to grease the baking pan Preheat oven to 400 degrees. Combine everything but the chocolate chips in a large mixing bowl. When thoroughly combined, evenly pack the mixture into a 9 x 9 parchment paper lined baking pan that you've greased with a little spray oil or butter. Press down slightly to compact the mixture. I crisscross my parchment sheets to make easy removal of the finished bars. Bake for 10-15 minutes until golden and set. Remove from oven and immediately sprinkle with the chocolate chips. Let set for about 5 minutes so the chocolate chips can melt with the heat of the bars. Using an offset spatula (easiest way to do this), spread the melted chocolate chips until the top looks like a lovely ganache. Place in the refrigerator and chill at least 2 hours or overnight, Remove the bars from the baking pan using the parchment paper to gently lift out, Cut into 16 bars (or more if you want smaller bars) with a good sharp knife. Enjoy and keep the bars chilled.
