This gorgeous chocolatey dip is my rendition of an expensive chocolate dip you can find in specialty grocery stores that is totally vegan, is typically cashew-based, and is found in the refrigerated section. I looked at the ingredients on the back of that container and knew I could make my own version at home for far less money.
After just a bit of experimentation I found the perfect chocolatey delicious dip that rivaled the expensive brand I found in the stores and the bonus was that this took no time to put together.
Food professor - I would say a food processor or very high powered blender is a must for this. The creamy consistency can only be obtained with a persistently running food processor or blender to get that perfect smooth spreadable or dip a bowl texture that is so desirable in this depth.
In my first version I hastened the process and ended up with a chunky yet still delightfully yummy dip/spread. The next time around I decided to adopt a bit more patience and waited for the creaminess to occur. Either way it tasted great. Like eyes closed and savoring the moment great. The ingredient list is very simple. You need raw, unsalted cashews, cocoa powder I used raw cacao) olive oil, a pinch of salt and you may or may not need a small amount of water to make the blend come together the way you want it.
This is great with anything you would want to smother in chocolate like strawberries, pretzels or apple slices. You can probably imagine quite a few other things that would go great with this dip (like a spoon).
Chocolate Cashew Dip
Makes about 1 1/2 cups decadent tasting dip 1 cup raw, unsalted cashews (I purchased from Thrive Market 1/4 cup cocoa powder (I used raw cacao from Thrive Market) 2 tablespoons olive oil (if you can find orange infused olive oil, that tastes amazing in this) 2-3 tablespoons water (optional and you may not need it) 1 tablespoon honey 1/4 teaspoon course sea salt Dippers Strawberries Pretzels Apple slices Add all ingredients except water to a food processor and blend until the mixture is very smooth. This may take a couple of minutes. My first batch was on the chunky side as I didn't let it go long enough, but it was still amazingly delicious. Add water a small amount at a time if you're having trouble getting the mixture to come together to a smooth consistency. Serve with basically anything you'd want smothered in chocolate.
