Who doesn’t love hot wings? Of course the heat level may be at one end of the scale or another, but the basic hot wing concept is glorious.
Tim and I love to go to Taco Mac. They have a billion beers on tap (that may be a slight exaggeration), and he likes to try a new IPA each time we visit, but we really do love their wings and have them served up with a side of sweet potato fries. Tim likes the flats and I like the drums so we’re a match made in Heaven. The problem is that sometimes the drum to flat ration is a bit inequitable and they usually err on the side of drums. So I’m in my happy place, then Tim has to partake of my drums since I can usually only eat about 4 or 5 since I do love those sweet potato fries.
Making wings at home is really easy and since I’ve been using my Ninja Foodi (available on our SHOP page) they’re now a weeknight occurrence. They take 30 minutes (for 2 pounds of wings) and turn out in crispy perfection.
The sauce is also super easy with simply hot sauce, agave, butter and salt. I love the Cholula Chipotle hot sauce and have been using it exclusively since I discovered it. The Smoky flavor is beyond delicious so these wings have a mild heat, but also that beautiful smoky flavor. Being that I like sweet heat, I bring the sweetness with a touch of agave. The sauce is a beautiful thing and Tim thinks it may even be better than our Taco Mac wing trips. I just don’t have a billion beers on tap.
Chipotle Agave Hot Wings (Air Fryer Method)
2 pounds chicken wings and drumettes ( I prefer to buy them whole & butcher them myself) 1/2 cup Cholula Ir McLhenny Chipotle hot sauce 2 tablespoons butter 1 tablespoon agave 1 tablespoon oil such as olive oil Salt & pepper to taste Toss chicken with a healthy pinch of salt, pepper and oil until well coated. Tip into air fryer basket & cook on tender crisp setting in Ninja Foodi (available on our SHOP page) or other air fryer for 30 minutes. The time may depend upon your air fryer. Alternatively you can roast on a baking sheet in the oven at 425 for about 45 minutes. I like my wings very crispy and the Ninja Foodi gives me exactly that texture I’m looking for without deep fat frying. While the wings are roasting, combine Chipotle hot sauce, agave, butter and a small pinch of salt in a small saucepan and cook on medium until the sauce starts to bubble. Let it cook for just a couple minutes. The agave will start to thicken the sauce a bit. Take off the heat and cover to keep the sauce warm until the chicken is ready, As soon as the chicken wings are done, toss them in the Chipotle Agave hot sauce, reserving a little on the side for those that like extra sauce. A sprinkling of cilantro or scallions makes these pretty, but all you need is your fingers to dive in.
