Serves 4 You'll need: Parchment Paper (4 sheets) Baking Sheets Box grater (for making quick work of the veggies) 4 skinless, boneless chicken breast cutlets 2 cups carrots, shredded 2 cups zucchini, shredded 1/2 thinly sliced red onion salt & pepper to taste ( I used some farmer's market rosemary salt) Herbs of choice (your pick; rosemary, thyme, oregano) olive oil (enough to drizzle over veggies) splash white wine (optional) You can shred the vegetables yourself, or buy them pre-shredded in the produce section of most grocery store.
