BAKING SHEETS                             PARCHMENT PAPER                                    BOX GRATER
​Chicken in Paper
Serves 4


You'll need:
Parchment Paper (4 sheets)
Baking Sheets
Box grater (for making quick work of the veggies)


4 skinless, boneless chicken breast cutlets
2 cups carrots, shredded
2 cups zucchini, shredded
1/2 thinly sliced red onion
salt & pepper to taste ( I used some farmer's market rosemary salt)
Herbs of choice (your pick; rosemary, thyme, oregano)
olive oil (enough to drizzle over veggies)
splash white wine (optional)

You can shred the vegetables yourself, or buy them pre-shredded in the produce section of most grocery store.



Instructions
  1. Preheat the Oven: Preheat your oven to 375°F (200°C).
  2. Season the Chicken: Place the chicken breasts in the uppercenter of the parchment. Drizzle with olive oil, and season with salt, pepper, garlic, and herbs of your choice if using. Top with onion, carrot and zucchini.
  3. Seal the Package: Fold the parchment over the chicken and crimp and fold the edges tightly to seal the package. Make sure it's well-sealed to prevent steam from escaping.
  4. Bake: Place the packets on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. Serve: Carefully open the packets (watch out for steam!) and serve the chicken directly in the parchment for a beautiful presentation.
