Sometimes the simplest things are the best. This recipe is a childhood memory of my mother's. Perfectly creamy cashew butter, crisp lettuce and salty bacon made into a sandwich. Her memory is of a dainty tea sandwich, from the once famous Fort Wayne Indiana institution Wolf & Dessauer's department store, but I made it into a heartier sandwich on toasted sourdough. My mother had fond memories of my great aunt Mary taking her to Wolf and Dessauer's to have this beautiful tea sandwich made with creamy cashew butter and crispy bacon. Wolf and Dessauer's was the place to shop in Fort Wayne Indiana. A place to see and be seen and apparently they have a wonderful cafe. Wolf and Desaurer's opened in Fort Wayne in 1896 and then sadly closed its doors in 1969. ![]() I can't imagine cashew butter was a kitchen staple in 1950's Indiana, so this sandwich must have been quite exotic to my young mother. Chili crisp (an Asian chili oil) is my own addition since I like a little but of heat, but you can certainly leave it off if you prefer. For some reason the majority of the photos I took had a bite out of the sandwich. I maintain plausible deniability. 😉 My Mom made this sandwich for Tim and I during our last visit and it was so fabulous. I couldn't wait to share it with you as well. So simple, yet so good. I happen to make mine an open face sandwich that is nice and hearty, but you can make yours into tea sandwiches, crust removed, if you want. Wolf & Dessauer's Cashew Butter Bacon Sandwich
Sourdough bread, sliced and toasted (or any type of bread you prefer) cashew butter Sliced bacon, cooked (I use uncured bacon) Romain lettuce leaves Chili crisp, optional (such as Fly by Jing) Slather a good amount of cashew butter on your toasted sourdough. Top with a piece of lettuce, then a slice or two of bacon. Drizzle with chili crisp if desired. Dig in.
