This was a recipe literally thrown together with some ingredients I had on hand and one of those “what can I put together for dinner” moments. It was a huge success, the recipe was requested and therefore I had to actually put it on paper…and online.
So easy to prepare and fish is one of my favorite weeknight dinners since it cooks so quickly. I’ve probably mentioned before, like at least 20 times, that fish is my favorite protein. I’m always looking for new ways to put it to use. This beautiful, flaky, spiced up grouper (of course you can use any firm white fish) is balanced by the fresh, cool pineapple avocado salsa. Zucchini noodles were the perfect quick side to accompany this weeknight meal. I think it’s special enough for company, so keeping this in my back pocket for the next opportunity. Cajun Grouper with Pineapple Avocado Salsa (with a side of Lemon oil zucchini noodles) Serves 4 4 Grouper filets or other firm white fish 2-4 teaspoons Cajun seasoning blend to taste 1/2 Pineapple, cored and diced 1 Avocado, cut into small dice 2T chopped Thai basil (can substitute basil, mint or cilantro) 1/2 t Aleppo pepper chili flake (ore regular chili flakes) Olive oil Salt Dust grouper with cajun seasoning blend to taste, using more or less depending on your spice/heat tolerance. Sprinkle with salt if your seasoning blend doesn’t have salt in it. Sauté in olive oil in a medium hot skillet for about 3 minutes on each side until grouper is nicely golden and seared on each side and just cooked through. While fish cooks makes salsa by mixing avocado, pineapple and Thai basil. Drizzle with a touch of olive oil, small sprinkling of salt and the Aleppo chili flake. Serve fish with a generous helping of avocado pineapple salsa on top. Lemon Oil Zucchini Noodles. 2 zucchini (or prepackaged spiralized zucchini noodles) 2 T Lemon olive oil (or regular olive oil and the zest of half a lemon) Salt to taste 1T Everything Bagel seasoning Place zucchini noodles in medium skillet and turn heat on low. I like to spiralize my zucchini right into the pan I’m cooking them in. As they come up to temp, drizzle in the lemon olive oil. These only need about 60 seconds just to warm through. Sprinkle with salt and Everything Bagel seasoning right before serving and toss.
