For each grapefruit Cut grapefruit in half across the equator. I love to use pink grapefruit for this. Sprinkle with 1/2 to 1 tablespoon cane sugar or turbinado sugar Using a brulee torch, torch until the top starts to caramelize. Garnish with a sprig of mint & serve immediately. You can also prepare these under a broiler. Watch closely and pull out as soon as the sugars start to burn. Note - you can also use oranges or blood oranges for this preparation.
