Sweet Potato Jalapeño Breakfast Tacos
Makes 4 tacos Ingredients
Instructions Sauté the Veggies: Drizzle avocado oil into a medium skillet. Add jalapeño and onion and saute over medium low heat, cooking until softened and lightly caramelized, about 5 minutes. Stir in the roasted sweet potatoes and taco seasoning and keep warm. Cook the Eggs: In a bowl, whisk eggs Pour beaten eggs over the veggie mixture and begin to gently stir over low heat. Add the cheese and stir until combined as well as adding salt and pepper to taste. Warm the Tortillas: Heat tortillas in a dry skillet or directly over a gas flame until warm and slightly charred. Assemble the Tacos: Spoon egg and sweet potato–jalapeño mixture onto each tortilla. Top with avocado slices, salsa, cilantro, and a squeeze of lime. Or drizzle with my Jalapeño Verde Sauce for an incredible spicy sweet acidic kick. Blender Jalapeno Verde Sauce In a blender add a jar of pickled jalapeños (juice and all), a small handful of cilantro and honey to taste (a couple teaspoons). Blitz until smooth and combined. So good !
