Breakfast Tacos with Sweet Potato & Jalapeno

These Sweet Potato Jalapeño Breakfast Tacos are the perfect blend of hearty, spicy, and fresh—giving you a satisfying morning meal that feels a little indulgent while still being full of wholesome ingredients.

Why Sweet Potato & Jalapeño Work So Well Together
Sweet potatoes bring natural sweetness, creaminess, and just enough heft to make tacos filling without being heavy. Paired with spicy jalapeño, you get that crave-worthy sweet-and-spicy combo in every bite. Add a little scrambled egg, toppings of choice (like my Blender Jalapeño Verde Sauce)  and a drizzle of crema and you’ve got yourself a breakfast that can power you through the busiest of mornings.

Building the Perfect Breakfast Taco
Here’s how to layer your taco for maximum flavor and texture:
  • The Base – Warm up corn or flour tortillas until soft and pliable.
  • The Sweet & Spicy Filling – Roasted diced sweet potatoes that are tossed with sautéed jalapeños and onions for a spicy kick, then all enrobed in silken egg.  Oh my.
  • The Finish – Fresh cilantro, crema, and a spoonful of Blender Jalapeño Verde Sauce.

Tips & Variations
  • Make It Ahead: Roast a big batch of sweet potatoes and keep them in the fridge. In the morning, just reheat and assemble.
  • Add Crunch: A handful of shredded cabbage or pickled red onions makes the tacos pop.
  • Heat Levels: Control the spice by removing jalapeño seeds and membranes—or add extra for more fire.

These sweet potato jalapeño breakfast tacos hit all the notes: sweet, spicy, creamy, and fresh. Whether you’re fueling up for;  work, a workout, or a lazy weekend morning, they’re guaranteed to keep you satisfied and smiling.

  • Protein Boost: Add cooked chorizo, bacon, or black beans.
  • Vegan Version: Skip the eggs and add sautéed mushrooms or scrambled tofu.

Sweet Potato Jalapeño Breakfast Tacos

Makes 4 tacos

Ingredients
  • 2 medium sweet potatoes, diced and roasted (I roasted mine for 15 minutes in my Ninja Foodi) (or packaged frozen sweet potatoes or homestyle hash browns)
  • 1 small onion, diced
  • 2 Tablespoons avocado oil
  • 1 teaspoon taco seasoning. (or make this great DIY Taco Seasoning)
  • Salt & pepper, to taste
  • 1 fresh jalapeño, diced
  • 4 large eggs. (Pasture raised are far superior)
  • 1/2 cup shredded cheese of choice (or more if you like it cheesy)
  • 4 regular sized flour tortillas (or corn tortillas if preferred)
  • For Garnish:  cilantro, lime wedges, sour cream, sliced avocado, salsa
  • Blender Jalapeno Verde Sauce (see recipe below)

Instructions

Sauté the Veggies:
Drizzle avocado oil into a medium skillet.  Add jalapeño and onion and saute over medium low heat, cooking until softened and lightly caramelized, about 5 minutes.
Stir in the roasted sweet potatoes and taco seasoning and keep warm.

Cook the Eggs:
In a bowl, whisk eggs
Pour beaten eggs over the veggie mixture and begin to gently stir over low heat.
Add the cheese and stir until combined as well as adding salt and pepper to taste.


Warm the Tortillas:
Heat tortillas in a dry skillet or directly over a gas flame until warm and slightly charred.

Assemble the Tacos:
Spoon egg and sweet potato–jalapeño mixture onto each tortilla.
Top with avocado slices, salsa, cilantro, and a squeeze of lime.  Or drizzle with my Jalapeño Verde Sauce for an incredible spicy sweet acidic kick.


Blender Jalapeno Verde Sauce
In a blender add a jar of pickled jalapeños (juice and all), a small handful of cilantro and honey to taste (a couple teaspoons).  Blitz until smooth and combined.  So good !
