This most comforting beef stew is perfect for a chilly day. It is hearty, has deliciously flavorful root vegetables and woodsy mushrooms. The sauce made from cooking everything together with beer is absolutely sumptuous. You will want to lick the bowl.
I start with beef sirloin tips, but even less expensive cuts of meat will work as long as you treat them low and slow to give them time to develop optimal tenderness.
Sweet carrots and onion, earthy mushrooms and the heft of potato just all come together to make this a dish something I simply want more of.
My Ninja Foodi makes very quick work of this, coming in at about 15 minutes on the pressure cooker setting. If you want to use a Dutch oven or large pot and cook stove top, plan for about an hour of simmer time. Depending on the cut of meat it may take more, but you just want to make sure those bits of beef are super tender.
Serving this warm nourishing stew with biscuits or noodles is definitely the way to go. I served this to my husband who is a self proclaimed "I do not like beef stew" kind of guy. He absolutely loved it and wanted more. I believe that speaks volumes!

Beef & Beer Stew Serves 4-6 2 tablespoons olive oil 1 1/2 pounds beef sirloin tips (I made sure they were bite sized pieces) 2 tablespoons brown rice flour (or regular flour) 1 medium onion, diced 2-3 large carrots, cut into bite sized pieces 2 cups new potatoes, quartered 1 package mushrooms, cut into halves orquarters (like baby portobello) 3-4 garlic cloves, minced 1 can or bottle of dark beer 2 tablespoons coconut aminos (or soy sauce or 1 tablespoon worchestershire) 1 teaspoon salt 1 teaspoon freshly ground pepper 1 1/2 teaspoon creole seasoning (like Tony Chachere's) Place beef tips in a shallow dish or plastic bag & add the brown rice flour. Toss to coat. Heat oil in the pot of your Ninja Foodi, Instant Pot or dutch oven until it starts to shimmer, then toss in beef tips. Add salt & pepper and stir as the beef tips begin to brown. This will take about 3 minutes. Once browned, but not completely cooked, add in onion, carrots, mushrooms and potatoes. Allow to saute and begin to soften for another 3-4 minutes. Add in garlic, beer, coconut aminos and creole seasoning. Stir. If you are covering and pressure cooking, this took 15 minutes in my Ninja Foodi. Cook times will vary for other devices. I waited a couple minutes, then released the pressure. Stove top should simmer on low, covered for about an hour until the beef tips are super tender. I'd use my Mueller Dutch Oven if not preparing in the Ninja Foodi. The stew will be thick and hearty. Great served with biscuits or over plain egg noodles. I made coconut flour biscuits compliments of The Wellness Mama cookbook and made mine in mini shapes.
