The Perfect Bite
Every layer of this sandwich serves a purpose: flaky cod, crispy panko crust, cool and tangy tartar sauce, fresh cabbage, and a rich buttery brioche bun. It's the kind of meal that feels special enough for a weekend treat but easy enough for a weeknight dinner.
Pair it with air fryer fries, potato wedges, or a simple pickle spear for the ultimate fish sandwich experience.

5 Ingredient Air Fryer Fish Sandwich

Serves 4

Ingredients
For the Fish
  • 4 cod fillets (about 5-6 ounces each)
  • 1/3 cup mayonnaise (I prefer Chosen Mayo)
  • 1½ cups panko breadcrumbs
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • Cooking spray
For the Tartar Sauce
  • ½ cup mayonnaise (I prefer Chosen Mayo)
  • ¼ cup cornichons (mini gherkin pickles), drained
  • 1 teaspoon cornichon brine (optional)


For Serving
  • 4 brioche buns, toasted
  • 1 cup shredded cabbage (red/purple or green)


Instructions


Prepare the Fish
Pat the cod fillets dry with paper towels.
In a shallow bowl, combine the panko breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper.

Spread a thin layer of mayonnaise over each cod fillet, coating all sides. Press the fillets into the seasoned panko mixture until completely coated.

Air Fry
Preheat the air fryer to 390-400°F.
Lightly spray both sides of the breaded fish with cooking spray. Arrange the fillets in a single layer in the air fryer basket, leaving space between each piece.
Cook for 10–12 minutes, flipping halfway through, until the coating is golden brown and the fish flakes easily with a fork.


While the Fish “fries” Make the Tartar Sauce
Add the mayonnaise, cornichons, and cornichon brine to a mini food processor or blender. Pulse until the mixture is finely chopped but still has a little texture. 

Toast the Buns
While the fish cooks, toast the brioche buns until lightly golden.

Assemble
Spread a generous layer of tartar sauce on the bottom bun. Add a crispy cod fillet. Top with more tartar sauce and cabbage then finish with the toasted bun.
Serve immediately.
